Orlando Culinary Academy offered two Associate in Science degree programs: Le Cordon Bleu Culinary Arts and Le Cordon Bleu Pâtisserie & Baking. Both programs were designed to span 15 to 21 months and included an externship during the final three months. The curriculum was delivered through professional kitchens, lecture classrooms, and an on-site library.
The Academy occupied an 80,000 square-foot freestanding facility at 8511 Commodity Circle in Orlando Central Park, a south Orlando office-industrial park. The campus included professional kitchens, lecture classrooms, a library, and administrative offices.
Admission required a personal interview, high school diploma or equivalent, and completion of an application, enrollment agreement, and financial aid forms.
OCA was accredited by the Accrediting Council for Independent Colleges and Schools (ACICS) and the American Culinary Federation Foundation Accrediting Commission. The school was affiliated with the Career College Association, Florida Association of Post-Secondary Schools and Colleges, Florida Restaurant Association, Florida Restaurant and Lodging Association, and American Culinary Federation.
